THE PAISA TRAY (Bandeja Paisa):
It is a well known, the most beloved and covered dish. It was called paisa tray by the large amount of food it contains. Bandeja paisa is something I’ve eaten all of my life. It is delicious. Traditionally, Bandeja paisa includes beans, white rice, chicharrón, carne en polvo, chorizo, fried egg, ripe plantain, avocado and arepa.
THE MAZAMORRA AND CLEAR:
Mazamorra is a dish very popular in the Pereira department of Colombia. It is one of those derived from corn, is usually offered as dessert. This like the clear (white broth derivative thereof) serves as companion to the paisa tray. It can be consumed with milk and panela. Personally, I love this dish.
THE AREPA:
Arepas are one of my favorite foods. The Arepa is one the most popular foods in Colombia. They’re served in almost every home. Arepas are very versatile and can be eaten for breakfast, lunch or dinner.
It is one of the Principal Components of the typical food of the coffee region, is not only essential in the paisa tray but also for breakfast or snack, at breakfast it is recommended to accompany with egg or with "The calentao", can also be accompanied with lunch in a broth and evening with a chocolate or coffee.
THE CALENTADO OR "CALENTAO"
Traditional Colombian Breakfast. Calentado literally means “heated” and is a traditional Colombian breakfast born in the Andean region of the country (Cities with Pereira, Manizales among others). It is very common, in this region, to eat beans and rice every day for dinner. Then, for breakfast the next day, the beans and rice are reheated and served with egg, arepa, chorizo, chicharrón or grilled beef and hot chocolate. This breakfast are of my memories of my grandmother and my mother.
